coming mainly from the hilly area between Florence and Vinci
Terrain Composition: Hilly terrains mainly
made up of sandstone, limestone- marl substrata, shale clay
and sand with the presence of galestro pebbles and rocks (called
Scheletro in technical terms)
Training System: Spurred cordon (spur pruned),
Guyot
Vine Density: At least 3000 plants per hectare
Yield per Hectare: The grape yield per hectare
does not exceed 14,000 kilograms. The maximum must-to-fruit
ratio does not exceed 70% Commercial Period Within the year
following the harvest
Fermentation and Aging: The grapes gathered
in the month of September are dispersed, pressed and for a
little while macerated cold to augment the extraction of aromas
and give the typical red color. Next the grapes go through
a soft pressing and the must is then fermented at a controlled
temperature of 15 °C in
steel tanks.
Sensory Chatacteristics: It is a wine with delicate and elegant
aromas of strawberries and cherries, with a lightly dry taste,
somewhat warm and soft and well balanced.
Tasting Temperature: 10-12 °C.
