Cormons - Collio - Merlot
A vine of French origins, it was imported in 1880 from Gironde (Bordeaux) to Friuli, where it has found its ideal habitat, it has adapted to the climate with no trouble at all, it has developed with vigour and fertility, so much so that it has become the most common vine after the Tocai Friuliano. The name of Merlot derives from the fact that its grapes, as well as being a favourite food of the blackbird (Merlo in Italian), are a deep black colour, reminiscent of the feathers of these birds.

An excellent wine for everyday use, but also an aristocratic and great reserve wine, Merlot has a rather intense ruby red colour, full of violet hues; when it is young it is lively, and extremely drinkable, characterized by a slight grassy undertone.

Perfect accompaniment to Italian hors d’oeuvres or snacks with ham, speck, salami or fresh cheeses. Excellent with gnocchi and pasta dishes, rabbit and poultry, chicken livers and pasta and beans. It should be served at room temperature in winter and at 15°C during the warmer seasons. Serve in a long-stemmed glass, in the shape of a newly opened tulip.
