- Limoncello
Limoncello is a liqueur that is obtained from the infusion and maceration of lemon peel; it is a traditional liqueur in the Mediterranean, especially on the Amalfi coast. Lemons with very thick peel, that is not excessively bitter, are picked for the preparation of Limoncello, and they are characteristic of the variety, the place and the climate in which they are cultivated. The peel is removed in such a way as to eliminate the white pith and is then left to macerate in alcohol so that the active principles and the aromas of the fruit are extracted. Limoncello is misty, almost cloudy, as it contains the natural suspended substances obtained by maceration.
It is a lemon yellow colour, verging on green. It has the scent of fresh grass, characteristic; with a sweet flavour, but dry, elegant and mellow. |
